First brew


So our first brew day is upon us. After driving around the city all day because our propane tank was leaking and we thought it was a broken gasket, we finally started at 5pm. After much guess work we decided to flavor our farmhouse ale with pink peppercorns, coriander, fenugreek and honey. Hopefully it will bring out the fruity peppery notes. We decided to go with a mix or east Kent goldings for bitterness and Syrian goldings and saaz for that lemony flavor. After all was said and done we finished just after midnight and will sleep soundly dreaming of delicious beer. Should be about 3 weeks for primary but I will keep everyone posted.

a brief little background history

So my name is Dane and a few months ago my friend Dave and I were talking about how amazing it would be to open up our own craft brewery.  After a few more inspiring beers we decided that it might be at least worth a shot.  For the past two months we've been slowly working on the details and wanted the world to be able to join us on our journey from homebrew to craft brewery (hopefully!)  I'm sure it will be a long a stressful one but this is something we are both very passionate about.  For those of you who have no clue who we are; I (Dane) am a young chef working in the city.  I grew up and have spent the majority of my twenty-six years living in Toronto.  Dave is from a small town north of Barrie and is currently an electrical engineer working in downtown Toronto.  We are both avid beer lovers and are starting to get pretty sick and tired of the mass-market domination of the Canadian Beer industry and although there probably isn't much we can do about it we just thought we'd give it a shot anyways!
